Der von der FAO und der WHO festgelegte Lebensmittelkodex sieht vor, dass der Glutengehalt in Lebensmitteln 20 Milligramm pro Kilogramm nicht überschreiten darf, um als "glutenfrei" gekennzeichnet zu werden. Maria Jesus Lobo betont jedoch, daß es besonders sensible Personen gibt, die diese Mengen nicht einmal tolerieren. Tatsächlich hat die Verband der Verbände der spanischen Celiacos bietet seine Qualitätskennzeichnung für Lebensmittel, die keine Glutenmengen von mehr als 10 Milligramm pro Kilogramm enthalten. Diese Schwellen für die Kennzeichnung werden in der Praxis durch die Empfindlichkeit der bisher zur Kontrolle verwendeten Analysemethoden bestimmt.

 

Der Beitrag der Gruppe Universität Oviedo Es handelt sich um eine Methode, die weniger Gluten als die derzeitigen Methoden aufspüren kann. Ihre Arbeit wird es ermöglichen, einen Weg für die systematische Substitution der heute vermarkteten Immunreagenzien mit geringer Stabilität, hoher Preis- und Tierherkunft durch andere synthetische Substanzen mit hoher Stabilität und moderaten Kosten zu finden.

 

Die Lehrerin für Physik und Analytik erklärt, dass diese neuen Reagenzien, so genannte Aptamere, Nukleinsäuren seien, die ausgewählt werden, um eine bestimmte Zielperson durch einen In-vitro-Prozess zu erkennen, der die natürliche Selektion nachahmt. "Ein Schlüssel zu unserem Erfolg liegt darin, dass wir in allen Phasen der Auswahl einen Proteinanteil, ein Peptid von nur 33 Aminosäuren, das der Verdauung unseres Körpers widersteht und als einer der Hauptauslöser für die Immunantwort nach der Glutenaufnahme durch Zöliakie identifiziert wurde, als Ziel verwenden."

 

Die neue Methode der Glutenerkennung in Nahrungsmitteln und Getränken bietet auch bedeutende Vorteile. Es ist relativ billig. Sie kann den Nachweis auf bis zu 0,5 Milligramm pro Kilogramm verbessern und ermöglicht außerdem die Unterscheidung von Gluten in Getreide wie Weizen, Roggen und Gerste, die für alle Zöliakie giftig sind, bei Hafer, der für einige Gefahren birgt, und bei Mais, Soja oder Reis, die als sicher gelten und häufig als Ersatz verwendet werden. Dieses neue Technologie-Tool wurde in einer Vielzahl von Lebensmitteln unterschiedlicher Verarbeitungsstufe validiert und hat sich als nützlich für die Sicherheitsbescheinigung erwiesen.

 

Sowohl die Aptamer als auch die Methode zur Nachweisung von Gluten-Partnern wurden durch ein Patent geschützt, das von der Universität Oviedo entwickelt wurde. Obwohl mit verschiedenen Unternehmen, nationalen und internationalen Unternehmen, die an ihrer Ausbeutung interessiert sind, Treffen abgehalten wurden, haben die Verhandlungen bisher noch nicht Früchte getragen. Die Forscher bedauern, daß das nationale Patent leider nicht auf andere Länder ausgedehnt werden konnte, weil es keine Finanzierung gab.
