Die Firma riojana JMP Ingenieure hat eine Methode der Desinfektion von Weinfässern entwickelt, die es ermöglicht, die Hefe vollständig zu entfernen Brettanomyces -das berühmte 'Brett'-, das die Weine verändern und sogar unbrauchbar machen kann.

 

Wie sein Generaldirektor Eduardo Remírez erklärt, basiert die Technologie dieses Prozesses auf der Anwendung von Hochfrequenzstrahlung, die es ermöglicht, diese Mikroorganismen absolut zu zerstören, ohne die Eigenschaften des Barriquefässers zu verändern.

 

 

Tests

 

Nach der Entwicklung der Technologie mit einer Investition von 480.000 Euro hat das Unternehmen eine Maschine für die Anwendung dieser Technologie hergestellt. Es wurde von unabhängigen Laboratorien getestet, die die Wirksamkeit der Methode bei der Entfernung von Brettanomyces zertifiziert haben.

 

Remírez zufolge handelt es sich um eine "effektive Methode" bei der vollständigen Beseitigung dieser Mikroorganismen gegen die Verwendung von Schwefeldioxid (SO2) bei der Reinigung und Desinfektion von Barriques, die die Europäische Union verbieten will und die es ermöglicht, die Mikroorganismenpopulation in den Weintonnen zu kontrollieren.

 

Ein weiterer Vorteil der neuen Methode gegenüber Schwefeldioxid und anderen Produkten, die es auf dem Markt geben kann, besteht darin, dass sie praktisch keine Energiekosten verursacht und das Arbeitstempo des Weinguts nicht verändert, da dieser Prozess eine Barrique innerhalb von maximal zwei Minuten desinfizieren kann. Das Unternehmen ist auch der Ansicht, dass diese neue Methode die Lebensdauer des Barriqueparks eines Weinkellers durch Optimierung seiner Alterung verlängern kann.

 

Spanische, chilenische und kalifornische Bodegas haben sich bereits für diese Maschine interessiert, die das Unternehmen als Prototyp für seine Tests entwickelt hat und die für die Herstellung in industriellem Einsatz begonnen hat.

 

Für den Generaldirektor der JMP Ingenieure stellt diese Methode eine "gute Lösung für ein schlechtes Problem" dar, da sie der Ansicht ist, dass die Probleme, die bei der Weinerzeugung auftreten, im Wesentlichen mit mikrobiologischen oder chemischen Verunreinigungen und manchmal mit der Entwicklung einer unerwünschten Flora zusammenhängen, die das Produkt in einer wesentlichen Weise verändern kann.
